Coconut Lemon Bliss Balls

Our resident nutritionist/food guru Jacqui is back with her top-secret Miss Bliss recipe to get you through the silly season.
This time of the year starts to get pretty crazy for me, my calendar is filling up with client work and I’ve started thinking about the festive season already (yes, I am that person). If I don’t have snacks on hand, I usually don’t eat! These are one of my favourite bliss balls and one of the most popular I sold in my cafe Miss Bliss before I sold it. They are fresh, zesty and so delicious.

Makes 25 balls
Takes 15 minutes
Gluten Free, Dairy Free, Vegan
What you’ll need
- 150g dates
- 300g almonds
- 150g desiccated coconut (plus more to coat)
- Zest & juice ½ lemon
- Pinch salt
The nitty gritty
- Pit the dates and combine all ingredients in a high-speed blender.
- Blend till all ingredients come together well.
- If the mixture is a little dry, mix in a teaspoon of water at a time till it comes together.
- Roll the balls into small balls and coat in the remainder of desiccated coconut.
- Place in an airtight container and in the fridge to set.
- Granola (I love cacao clusters)
- Seasonal fruit
- Roasted apples (don’t panic, they’re easy!)
