Coconut Lemon Bliss Balls
Makes 25 balls
Takes 15 minutes
Gluten Free, Dairy Free, Vegan
What you’ll need
150g dates
300g almonds
150g desiccated coconut (plus more to coat)
Zest & juice ½ lemon
Pinch salt
The nitty gritty
Pit the dates and combine all ingredients in a high-speed blender.
Blend till all ingredients come together well.
If the mixture is a little dry, mix in a teaspoon of water at a time till it comes together.
Roll the balls into small balls and coat in the remainder of desiccated coconut.
Place in an airtight container and in the fridge to set.
